Isinglass

Whole and shredded isinglass

Isinglass is made from the collagen-rich swim bladders of sturgeon and some other fish. The best quality has always come from the Caspian Sea.Other materials formerly used for making jelly were calves' feet, grated hartshorn, ivory shavings and pigs' skin.
